Do you ever feel like the week leading up to a long weekend makes you work a little harder for that extra time off? This last week felt more busy than usual and I think that’s because there’s a mindset of getting as much done as possible before taking an extra day off. It’s just one day and time off is a necessity. So, why do we put ourselves through the extra scramble right before a little R&R?
When I left my corporate job, I had visions of life being easier and leaving those unnecessary stress habits behind. Although I’m much happier doing what I love and not having to balance my photography with my day job anymore, I’m finding it’s not as easy to break some of my old ways of thinking and doing.
One of the challenges for me is that my schedule isn’t routine like it was with my day job. Every week is different and it’s up to me to set my schedule. I love the freedom of this, but sometimes I don’t know where to start.
And, whether you have the same schedule each week or a schedule that is constantly changing, it can be a challenge to find our balance with it all at times. It takes practice and I think that’s what these long weekends are all about. They’re a reminder to leave the to-do list on your desk and slow down so you can focus on other important things like, “what am I bringing to the Memorial Day weekend BBQ?”
To practice the art of slowing down, I am keeping it super simple in the kitchen this weekend with this Strawberry Salsa recipe. You’ll be amazed at how easily it comes together and how refreshing the flavors are. It’s a nice combination of sweetness from the strawberries and spiciness from the jalapeno. It’s also incredibly versatile. You can pair the salsa with fish, chicken, tacos, chips… or just use a spoon. It tastes like summer. I hope that whatever you’re doing over this long weekend that you allow yourself to detach from the business, take time to relax and appreciate how good it feels to slow down… all while enjoying some delicious food, of course. Have fun this weekend! You deserve it!
3 cups of strawberries, diced
1/2 red onion, diced
Lime zest from 1 lime
Lime juice from 2 limes
1 jalapeño, seeded and diced
Note: Leave some seeds for extra spice
1/3 cup cilantro, chopped (sprigs for garnish)
Pinch of salt
1. In a large bowl, mix together strawberries, onion, jalapeño, cilantro, lime juice and zest. Season with salt.
2. Let chill in fridge for 20-30 minutes to let the flavors mix together.
3. Serve with tacos, chips or a spoon.
