Memorial Day weekend is here. I’m looking forward to slowing down and relaxing. With that mentality in mind, I decided to keep it super simple in the kitchen with this Strawberry Salsa recipe.
You’ll be amazed at how easily it comes together and how refreshing the flavors are. It’s a nice combination of sweetness from the strawberries and spiciness from the jalapeno. It’s also incredibly versatile. You can pair the salsa with fish, chicken, tacos, chips… or just use a spoon. It tastes like summer.

I hope that whatever you’re doing over this long weekend that you allow yourself to detach from business, take time to relax and appreciate how good it feels to slow down… all while enjoying lots of delicious food and drink, of course.
3 cups of strawberries, diced
1/2 red onion, diced
Lime zest from 1 lime
Lime juice from 2 limes
1 jalapeño, seeded and diced
Note: Leave some seeds for extra spice
1/3 cup cilantro, chopped (sprigs for garnish)
Pinch of salt
1. In a large bowl, mix together strawberries, onion, jalapeño, cilantro, lime juice and zest. Season with salt.
2. Let chill in fridge for 20-30 minutes to let the flavors mix together.
3. Serve with tacos, chips or a spoon.
