It seems like everyone is traveling someplace warm these days. Although I would love to be on a beach… under an umbrella… somewhere far away, I’m settling into an appreciation for the world that surrounds me nearby.
We took a quick trip to Union Pier, Michigan this past weekend. We visited our good friends (Dan, Mike and Maddy) and I was able to connect with some restaurant and brewery owners on photography opportunities. Although I was mixing business with pleasure, it was a really great time. My favorite part was when we all took a long morning walk on the beach. Lake Michigan was incredibly peaceful, despite the high tide. The beach seemed to go on forever and as we walked, we admired the stunning homes, waved to people who were out walking their dogs and enjoyed the views of the water. The energy of a new day was there and yet, everything felt calm for a moment.
I leave for Minnesota on Monday morning for a few days and I’ll be visiting my Mom (Carol). We’re planning a quick trip up to Duluth, Minnesota together to see my sister and brother-n-law (Dianne and Paul) where they’re helping me with an exciting photography project at their farm. I’m also connecting with a couple of restaurant owners in Rochester and I’m hoping to see my younger brother (Lee) for a dinner or two. It should be a really good week.
Before I head out, I wanted to share this Strawberry and Banana Smoothie recipe with you. It’s such a perfect on-the-go morning drink since it only has a few ingredients and comes together super fast. It has been my ‘go-to’ during my recent road trips and tastes perfect for spring.
STRAWBERRY BANANA SMOOTHIE
2 frozen bananas
1 cup frozen strawberries
2 teaspoons peanut butter
1 teaspoon vanilla
1/2 – 1 cup almond milk
1. Add all the ingredients to a Vitamix or blender.
2. Blend until smooth and serve immediately.
