How is your December going? I’ve heard a couple of different responses to this question lately. Some are ready for the holidays and seem to be taking the last couple weeks of the year in stride. Others are completely overwhelmed and feel like they can’t keep up with everything there is to do. I can relate to both perspectives, however I’m really trying to make a point to enjoy what is left of this year.
One of the ways I’m doing this is by simplifying my to-do list. Cooking and shooting recipes are always on my list, but with the blog redesign taking priority right now, I haven’t had as much time to dedicate to my recipe shoots. Since I can’t just stop cooking and shooting, I decided to focus on recipes that are ridiculously easy to throw together and save the more complicated recipes for after the blog has launched. Move over Duck Confit, this Cranberry Salsa is next on the list.
The first time I tried cranberry salsa was over Thanksgiving at Catering By Design in Rochester, MN. I was waiting for my mom to pick up some extra goodies for her Thanksgiving feast and there were samples of their food to try while you waited. I was immediately drawn to the vibrant colors of the salsa. After I tasted it, I knew I wanted to make it at home and share it with you. It’s such a perfect recipe for this time of year since the cranberries are so seasonal. I loved how easily it came together too, because I threw all of the ingredients into my Vitamix and it was done. No chopping required.
It’s not as tart as you might think either. The lime juice and sugar add a refreshing sweetness and if you’re into a little kick of heat, one jalepeno (seeds removed) does the trick. The hints of cilantro that shine through are probably my favorite part. Since the flavors of this salsa are so well-balanced, it pairs really well with meats and cheeses. The recipe makes quite a bit too, so you could add some into a couple of 4 ounce or 8 ounce mason jars and give them away as delicious holiday gifts.
How are you simplifying your to-do list this holiday season?
1 (12 ounce) bag fresh cranberries
1 bunch cilantro
1 bunch scallions
1 jalapeno, seeded and minced
2 limes, juiced
1/2 cup sugar
1 pinch salt
1. Combine all the ingredients in a Vitamix or blender and blend to desired consistency.
2. Chill until ready to serve.
