Caprese Salad


Summer is coming to a close and this just happens to be when our garden tomatoes are pretty much perfect. We snagged quite a bounty this morning. And, although I am very excited for fall (my favorite season), I wanted to make something that could help me hold on to summer just a little bit longer. It's our first summer in our house together and I'm not ready for it to come to a close just yet.

Vibrant tomatoes, creamy mozzarella and fresh basil are BFF's. You really can't go wrong with this combination of flavors. Drizzle on some extra virgin olive oil and balsamic vinegar and you've got summertime on a plate.

What's your favorite summer meal? 


Heirloom Tomatoes (or tomatoes of your choice)
Fresh Mozzarella
Fresh Basil Leaves
Chopped Basil for Garnish
Balsamic Vinegar
Extra Virgin Olive Oil

Slice tomatoes and arrange on plate
Carefully slice and layer fresh mozzarella on top of each tomato slice
Add a basil leaf on top of each mozzarella slice
Drizzle olive oil & balsamic as desired
Sprinkle salt & pepper to taste
Add chopped basil for garnish
